Goat Cheese, Cranberry and Balsamic Vinaigrette
Ingredients:
* ½ Pound of your favorite goat cheese
* ½ (generous) cup of craisins (dried sweetened cranberries)
* 2 Tablespoons Nancy's Balsamic Vinaigrette
Instructions:
Pulse the Craisins in the food processor until they are about ½ their original size. Add goat cheese and vinaigrette and blend.
Serve with Low Fat Wheat Things or your favorite cracker.
Note: These same ingredients can be the start of a delicious salad. I like to use Romaine as it can stand up to the Craisins.
To Serve Six: Wash and break into pieces two head of romaine. Sprinkle with about 3/4th cup Craisins, ½ cup chopped cashews or pecans and ½ cup crumbled goat cheese. Dress sparingly with Nancy's and enjoy!
